Ingredients
- 3/4 cup quick-cooking oats
- 3/4 cup unsweetened dried shredded coconut
- 3/4 cup all-purpose flour
- 1/2 cup superfine sugar
- 1 pinch salt
- 7 tablespoons unsalted butter
- 1 tablespoon golden syrup
- 1 teaspoon baking soda
- 2 tablespoons boiling water
Recipe
- 1 preheat oven to 350 degrees f and grease a few baking sheets.
- 2 mix the oats, coconut, flour, sugar, and salt in a large bowl. then melt the butter in a small pan and stir in the golden syrup. add the baking soda to the boiling water and stir this into the golden syrup mixture.
- 3 make a well in the center of the dry ingredients and pour in the golden syrup mixture. stir well.
- 4 place tablespoons of dough on baking sheets, at least one inch apart.
- 5 bake 10 minutes until golden brown. set to cool on cooling racks.
