1942 Devil’s Food Cake

Ingredients

  • Servings: 12
  • 3 ounces unsweetened chocolate
  • 1 1/3 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 6 tablespoons unsalted butter, cut into 6 pieces
  • 3/4 cup boiling water
  • 1 1/2 cups sugar
  • 6 tablespoons sour cream or 6 tablespoons buttermilk
  • 2 large eggs

Recipe

  • 1 butter two 9-inch round cake pans; line bottoms with parchment paper or waxed paper.
  • 2 position a rack in the middle of the oven; preheat to 350°.
  • 3 melt chocolate in a large heatproof bowl set over hot, but not simmering water; let cool.

  • 10 cool in pans on racks for 5 minutes; then unmold onto racks to finish cooling.
