Caramel-filled Chocolate Cookies

Ingredients
- 1 cup sugar
- 1 cup packed brown sugar
- 1 cup butter, softened
- 2 teaspoons vanilla
- 2 eggs
- 2 1/2 cups flour
- 3/4 cup unsweetened cocoa
- 1 teaspoon baking soda
- 48 rolo chocolates, unwrapped
- 1 tablespoon sugar
- 4 ounces chocolate, melted
Recipe
- 1 in a large bowl, combine 1 cup sugar, brown sugar, and butter; beat until light and fluffy. add vanilla and eggs; blend well.
- 2 in a small bowl, combine flour, cocoa, and baking soda; mix well.
- 3 add to sugar mixture; blend well. cover with plastic wrap and refrigerate for 30 minutes.
- 4 heat oven to 375.
- 5 for each cookie, with floured hands, shape 1 tablespoon dough around 1 candy, covering completely.
- 6 place 2" apart on an ungreased cookie sheet and bake 7-10 minutes.
- 7 cool for 2 minutes; remove from cookie sheets and let cool completely.
- 8 in a small saucepan, melt chocolate and drizzle over the cookies.
