Caramel-filled Chocolate Cookies

Total Time: 40 mins Preparation Time: 30 mins Cook Time: 10 mins

Ingredients

  • 1 cup sugar
  • 1 cup packed brown sugar
  • 1 cup butter, softened
  • 2 teaspoons vanilla
  • 2 eggs
  • 2 1/2 cups flour
  • 3/4 cup unsweetened cocoa
  • 1 teaspoon baking soda
  • 48 rolo chocolates, unwrapped
  • 1 tablespoon sugar
  • 4 ounces chocolate, melted

Recipe

  • 1 in a large bowl, combine 1 cup sugar, brown sugar, and butter; beat until light and fluffy. add vanilla and eggs; blend well.
  • 2 in a small bowl, combine flour, cocoa, and baking soda; mix well.
  • 3 add to sugar mixture; blend well. cover with plastic wrap and refrigerate for 30 minutes.
  • 4 heat oven to 375.
  • 5 for each cookie, with floured hands, shape 1 tablespoon dough around 1 candy, covering completely.
  • 6 place 2" apart on an ungreased cookie sheet and bake 7-10 minutes.
