Caramel Cream Cookies

Ingredients
- 1 cup butter, softened
- 2/3 cup brown sugar, packed
- 2 large egg yolks
- 1/2 teaspoon vanilla extract
- 2 1/2 cups flour
- 1/3 cup finely chopped pecans
- 1/4 teaspoon salt
- 2 tablespoons butter
- 1 1/2 teaspoons butter
- 1 1/2 cups powdered sugar
- 2 -3 tablespoons whipping cream
- 1/2 teaspoon vanilla
Recipe
- 1 in large bowl, cream butter and brown sugar.beat in egg yolks and vanilla --
- 2 combine dry ingredients in a seperate bowl.
- 3 gradually add to creamed mixture.
- 4 shape into 2 10" rolls.
- 5 wrap each roll in plastic wrap.refrigerate 2 hours.
- 6 unwrap and cut into 1/4" slices.
- 7 place 2" apart on ungreased cookie sheet.
- 8 bake at 350* for 11-13 minutes, or golden brown.
- 9 remove to rack to cool.
- 10 to prepare filling:.
- 11 heat butter in saucepan over medium heat until golden brown.
- 12 remove from heat and add powdered sugar, vanilla and enough cream to be of spreading consistency.
- 13 spread on bottoms of each cookie and top with another cookie.
