Caramel Cream Cookies

Total Time: 2 hrs 11 mins Preparation Time: 2 hrs Cook Time: 11 mins

Ingredients

  • 1 cup butter, softened
  • 2/3 cup brown sugar, packed
  • 2 large egg yolks
  • 1/2 teaspoon vanilla extract
  • 2 1/2 cups flour
  • 1/3 cup finely chopped pecans
  • 1/4 teaspoon salt
  • 2 tablespoons butter
  • 1 1/2 teaspoons butter
  • 1 1/2 cups powdered sugar
  • 2 -3 tablespoons whipping cream
  • 1/2 teaspoon vanilla

Recipe

  • 1 in large bowl, cream butter and brown sugar.beat in egg yolks and vanilla --
  • 2 combine dry ingredients in a seperate bowl.
  • 3 gradually add to creamed mixture.
  • 4 shape into 2 10" rolls.
  • 5 wrap each roll in plastic wrap.refrigerate 2 hours.
  • 6 unwrap and cut into 1/4" slices.
  • 7 place 2" apart on ungreased cookie sheet.
  • 8 bake at 350* for 11-13 minutes, or golden brown.
  • 9 remove to rack to cool.
  • 10 to prepare filling:.
  • 11 heat butter in saucepan over medium heat until golden brown.
  • 12 remove from heat and add powdered sugar, vanilla and enough cream to be of spreading consistency.
  • 13 spread on bottoms of each cookie and top with another cookie.
