Butterscotch Fudge

Total Time: 3 hrs 5 mins Preparation Time: 35 mins Cook Time: 2 hrs 30 mins

Ingredients

  • Servings: 16
  • 1 cup chopped walnuts
  • 7 ounces marshmallow cream
  • 1 1/2 cups sugar
  • 2/3 cup evaporated milk
  • 1/4 cup butter
  • 1/4 teaspoon salt
  • 12 ounces butterscotch chips
  • 1 teaspoon orange extract
  • 1 teaspoon grated orange rind

Recipe

  • 1 foil-lined 8" square pan.
  • 2 spread 1/2c walnuts evenly on bottom of pan.
  • 3 set aside.
  • 4 in heavy gauge saucepan combine marshmallow cream, sugar, evaporated milk, butter & salt.
  • 5 bring to a full rolling boil over moderate heat stirring consistently.
  • 6 boil 5min. stirring consistently.
  • 7 remove from heat.
  • 8 add butterscotch
  • 9 stir until morsels melt & mixture is smooth.
  • 10 stir in orange extract & orange rind.
  • 11 pour into prepared pan sprinkling remaining 1/2c walnuts on top.
  • 12 chill until firm or about 2 hours.
  • 13 makes 2/1/3lbs.
