Butterscotch Cranberry Sauce

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • 1 cup firmly packed light brown sugar
  • 2 tablespoons light corn syrup
  • 2 tablespoons unsalted butter
  • 1/2 cup heavy cream (whipping)
  • 1/4 teaspoon salt
  • 1 cup cranberries (fresh are better)

Recipe

  • 1 in a heavy saucepan combine the brown sugar, corn syrup, butter and heavy cream. add the salt.
  • 2 bring the liquid to a boil, stirring, and simmer for 5 minutes.
  • 3 add cranberries and simmer, stirring occasionally, for 5 mins, or until the berries have burst and the liquid is reduced to about 1-1/2 cups.
