Angel Mango Pie

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 4 egg whites
  • 1 cup sugar (superfine)
  • 1 teaspoon vinegar
  • 1 teaspoon vanilla
  • 1 (30 ounce) can mangoes, drained well
  • 2 large limes, juice of or 4 small limes, juice of
  • 1 (14 ounce) can sweetened condensed milk
  • 2 drops almond extract
  • 1/2 cup whipping cream

Recipe

  • 1 preheat oven to 275.
  • 2 beat egg whites until thick but not stiff.
  • 3 gradually add sugar.
  • 4 beat vinegar into mixture.
  • 5 add vanilla.
  • 6 pour into well greased 9" pie plate.
  • 7 bake 1 hour.
  • 8 puree drained mangoes in blender.
  • 9 mix together lime juice, condensed milk, almond extract and mangoes.
  • 10 in small bowl, whip cream and blend into mango mixture.
  • 11 chill well.
  • 12 at serving time, spoon into meringue shell and cut into wedges.
