Caramel, Banana, & Date Loaf

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • 2 cups self raising flour
  • 1 teaspoon bicarbonate of soda
  • 1/2 teaspoon ground nutmeg
  • 1 cup pitted dates, finely chopped
  • 2/3 cup brown sugar, firmly packed
  • 3/4 cup orange juice
  • 1 large egg
  • 60 g butter, melted
  • 1 cup ripe mashed banana

Recipe

  • 1 grease a 14cmx21cm loaf pan, line base and long sides.
  • 2 combine flour, bicarb, and nutmeg in a large bowl. stir in dates and brown sugar. make a well in the centre, add juice, butter, egg, and bananas. mix with a wooden spoon until smooth. pour mixture into prepared pan.
  • 3 cook at 180c for about 1 hour.
  • 4 stand cake in pan for 5 minutes before turning out on a rack.
  • 5 serve warm or cold, with a little butter.
