Caramel, Banana, & Date Loaf

Ingredients
- 2 cups self raising flour
- 1 teaspoon bicarbonate of soda
- 1/2 teaspoon ground nutmeg
- 1 cup pitted dates, finely chopped
- 2/3 cup brown sugar, firmly packed
- 3/4 cup orange juice
- 1 large egg
- 60 g butter, melted
- 1 cup ripe mashed banana
Recipe
- 1 grease a 14cmx21cm loaf pan, line base and long sides.
- 2 combine flour, bicarb, and nutmeg in a large bowl. stir in dates and brown sugar. make a well in the centre, add juice, butter, egg, and bananas. mix with a wooden spoon until smooth. pour mixture into prepared pan.
- 3 cook at 180c for about 1 hour.
- 4 stand cake in pan for 5 minutes before turning out on a rack.
- 5 serve warm or cold, with a little butter.
