Buttermilk Cocoa Cake

Ingredients

  • Servings: 12
  • 1/4 cup cocoa
  • 1 cup water
  • 1/2 cup butter, cubed
  • 2 cups all-purpose flour
  • 2 cups sugar
  • 1 teaspoon baking soda
  • 2 eggs, lightly beaten
  • 1/2 cup vegetable oil
  • 1/2 cup buttermilk
  • 1/4 cup cocoa
  • 1/2 cup butter, cubed
  • 1/2 cup buttermilk
  • 3 3/4 cups confectioners' sugar
  • 1 teaspoon vanilla
  • 1/2 cup pecans, chopped (optional)

Recipe

  • 1 in a large saucepan, combine 1/4 cup cocoa and water until smooth.
  • 2 add 1/2 cup butter. bring just to a boil.
  • 3 remove from the heat.
  • 4 in a large mixing bowl, combine the flour, sugar and baking soda; add cocoa mixture.
  • 5 combine eggs, oil and 1/2 cup buttermilk; beat until smooth.
  • 6 pour into a greased 13x9x2 in pan.
  • 7 bake at 350 for 30-35 min or until a toothpick inserted near the centre comes out clean.
  • 8 for frosting: in a large saucepan, bring 1/4 cup cocoa, 1/2 cup butter and 1/2 cup buttermilk to a boil.
  • 9 remove from the heat.
  • 10 whisk in the confectioner's sugar and vanilla.
  • 11 spread over warm cake.
  • 12 sprinkle with pecans.
  • 13 cool on a wire rack.
