Buttermilk Cocoa Cake

Ingredients

- 1/4 cup cocoa
- 1 cup water
- 1/2 cup butter, cubed
- 2 cups all-purpose flour
- 2 cups sugar
- 1 teaspoon baking soda
- 2 eggs, lightly beaten
- 1/2 cup vegetable oil
- 1/2 cup buttermilk
- 1/4 cup cocoa
- 1/2 cup butter, cubed
- 1/2 cup buttermilk
- 3 3/4 cups confectioners' sugar
- 1 teaspoon vanilla
- 1/2 cup pecans, chopped (optional)
Recipe
- 1 in a large saucepan, combine 1/4 cup cocoa and water until smooth.
- 2 add 1/2 cup butter. bring just to a boil.
- 3 remove from the heat.
- 4 in a large mixing bowl, combine the flour, sugar and baking soda; add cocoa mixture.
- 5 combine eggs, oil and 1/2 cup buttermilk; beat until smooth.
- 6 pour into a greased 13x9x2 in pan.
- 7 bake at 350 for 30-35 min or until a toothpick inserted near the centre comes out clean.
- 8 for frosting: in a large saucepan, bring 1/4 cup cocoa, 1/2 cup butter and 1/2 cup buttermilk to a boil.
- 9 remove from the heat.
- 10 whisk in the confectioner's sugar and vanilla.
- 11 spread over warm cake.
- 12 sprinkle with pecans.
- 13 cool on a wire rack.
