Apricot Truffles

Ingredients

  • Servings: 30
  • 750 g dried apricots
  • 2 cups desiccated coconut
  • 1 1/2 cups brown sugar
  • 590 g sweetened condensed milk (or 1 1/2 tins)
  • 3 teaspoons lemon juice

Recipe

  • 1 mince apricots in blender.
  • 2 combine with 1 1/2 cups of coconut and all other ingredients (reserving 1/2 cup coconut for rolling) and blend well.
  • 3 take a teaspoonful of mixture and roll into balls.
  • 4 toss in extra coconut.
  • 5 store in fridge.
