Apricot Loaf

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • 1 cup chopped apricot
  • 1/2 cup currants
  • 1/2 cup sultana
  • 1/2 cup sugar
  • 1/4 lb butter, softened
  • 2 cups self raising flour
  • 2 large eggs, beaten
  • chopped preserved gingerroot (optional)
  • chopped pecans or walnuts (optional)

Recipe

  • 1 grease a 7'x3'x2' loaf tin.
  • 2 pour a (250ml) cup of boiling water over fruit, sugar and butter.
  • 3 add the eggs and flour.
  • 4 pour into the loaf tin and bake in a moderate oven for about 45 minutes.
