Brownie Caramel Parfaits

Ingredients

• Servings: 6
• 1/2 cup chopped nuts
• 1/2 cup shredded coconut
• 1 (16 ounce) box brownie mix (8 inch x 8 inch)
• 2 -3 eggs
• oil
• water
• 1 pint vanilla ice cream
• 1 (12 1/4 ounce) jar caramel ice cream topping

Recipe

• 1 place nuts and coconut in an ungreased baking pan.
• 2 bake at 350 for 10-12 minutes or until toasted, stirring frequently.
• 3 meanwhile, prepare brownies according to package directions.
• 4 cool; cut into small squares.
• 5 when ready to serve, layer the brownies, ice cream, caramel topping and nut mixture in parfait or dessert glasses; repeat layers one or two times.
