Blueberry Muffins (gluten-free)

Total Time: 26 mins Preparation Time: 10 mins Cook Time: 16 mins

Ingredients

  • 1 1/2 cups brown rice flour
  • 1/2 cup sugar
  • 2 1/2 teaspoons baking powder
  • 1/4 teaspoon sea salt
  • 1/4 cup butter, melted
  • 2 eggs
  • 1/3 cup milk
  • 1/2 teaspoon baking soda
  • 2 tablespoons lemon juice
  • 2 cups blueberries

Recipe

  • 1 mix dry ingredients.
  • 2 add melted butter with electric mixer.
  • 3 add eggs.
  • 4 add milk.
  • 5 add baking soda and lemon juice.
  • 6 stir in blueberries.
  • 7 bake at 350 degrees for 16-17 minutes.
